The Story of Maboroshi Junmai Daiginjo

Maboroshi overturned all previous notions of sake, but how was it born?
Here we introduce our signature apple yeast and the stories behind the tireless efforts of our brewery.
Maboroshi, the Daiginjo-shu brewed with the legendary apple yeast starter mash discovered by Nakao Brewery’s 4th generation master, Kiyoma Nakao,
was awarded first prize at a nationwide competition in 1948 and was chosen as the Imperial Household’s New Year’s sake for three years in a row.
Maboroshi Junmai Daiginjo sake was faithfully brewed in the methods of the time.
