Sake brewed in the depths of winter is pasteurized just as spring approaches and allowed to rest in the brewery storehouses. Come autumn, after the sake has spent the summer resting, it achieves a beautifully balanced umami-rich mellow flavor.
It does not undergo a second pasteurization before bottling and shipment and is therefore known as hiyaoroshi. Enjoy its deep flavors and gentle aromas.
